COPPERWARE - GENERAL INFO

Copper pans have been used in the kitchen for centuries as copper conducts the heat better than any other metal: they heat up more quickly and evenly (top + bottom) - which results in shorter cooking times and tastier food.
 
Copper is slightly acidic and reacts with certain foods and is therefore lined with another metal: TIN or STAINLESS STEEL.
Both linings have advantages and disadvantages.
 
TIN LINED COPPERWARE:

:  tin gives a better heat conduction than stainless steel , so food heats up really quickly
:  tin is more delicate than stainless steel - you can only use wooden or silicone utensils  (no metal)

STAINLESS STEEL LINED COPPERWARE:

:  stainless steel is much less delicate – you can use metal utensils
:  stainless steel is a slower heat conductor than tin – so these copper pans heat up slower than tin lined copper pans

BAUMALU produces 1 mm and 2 mm thick copperware in HAMMERED and SMOOTH copper.

You might wonder: is there a big difference between 1 mm and 2 mm thick copperware ?
The answer is simple: yes, the difference is seriously significant.

The 1 mm copper pans feel very light, will easily dent and are not ideal for cooking (although you can cook with them). Most of the 1 mm copperware is sold to decorate a country kitchen: a nice display of 5 different sized pans above the AGA or Rayburn.
The 2 mm copperware feels much heavier, is much more robust and its 2 mm copper layer conducts the heat extremely well and fast.
This 2 mm copperware is the most used copper cookware - as well by the enthousiastic home cook as by many famous (and less famous) chefs.

We only sell the professional 2 mm thick Baumalu copperware (with an extra 0.5 mm TIN lining), both in HAMMERED  and SMOOTH copper.

HAMMERED copper is beaten with a hammer: it leaves small dents all over the surface and results in a high quality product:
     - the tiny dents reinforce the copper
     - daily wear and tear (scratches) are less visible

The BAUMALU copperware has CAST IRON HANDLES :
     - hand made : handles can differ in shape and length - which give the pans more “authenticity”
     - hand riveted to the pan with 2 or 3 rivets

This copperware can be used on the following types of cookers/ hobs: electric - gas - Aga/Rayburn - ceramic and in the oven.
For induction cookers: only suitable when used with a special adaptation disk (available in our shop: click HERE)

The BAUMALU cookware is still TINNED BY HAND according to traditional techniques!  (brush marks and/or small irregularities are still visible)

Several stages in the manufacturing process are still done manually according to the old traditions (tinning – riveting – hammering) and therefore irregularities can occur
on the tinned /copper surface, the placing of the handles or the fitting of the lids. PLEASE KEEP THIS IN MIND WHEN PURCHASING THESE COPPER PANS!
